Oko-Caribe cocoa is an organic cocoa produced on land completely subjected to agroforestry systems, with an internal control system that guarantees the traceability of the product. To complement the management of the farm, Oko-Caribe pays particular attention to cocoa in post-harvest handling, to obtain the organoleptic characteristics typical of good cocoa. This is done by harvesting only the cocoa beans at their optimal state of ripeness, opening the beans without damaging them, transporting the cocoa to your processing center within the first 4-6 hours, letting it ferment in staggered wooden crates for 5-6 days, mixing them regularly, and then drying the beans in solar dryers until they reach 6.5% humidity.

This cocoa is characterized by a strong base note of chocolate, to which are added notes of coconut milk, caramel, vanilla, creme brulée, lavender and violets. And you, what notes do you perceive?

We chose the beans together, so that they responded to the request for traceability, organic origin and "best" price for farmers. We use "better" with great modesty, many open questions and with the commitment to always do better. Let's not talk about fair trade, about the right price : we are still too far from that better future that we want to co-create and of which we would like DUDUUM to be a flourishing seed.
